Add the pork ribs, ginger slices, and cooking wine. Once boiling, skim off the white foam with a spoon. Cook for 2-3 minutes, then remove and set aside. * Rinse the pork ribs under cold water 2-3 times. * Heat a clean pot over low heat and add the cooking oil. Add the white sugar and stir gently until the sugar syrup turns golden yellow. * Add the pork ribs and stir-fry for 30 seconds. Then add the light soy sauce, oyster sauce, five-spice powder, garlic, and millet peppers. Stir-fry for another 30 seconds, then add enough water to submerge the ribs. * Bring to a boil over high heat and cook for 30 minutes.
